Breakfast Pizza
For the pizza dough (2 pizzas):
- 2 cups flour plus extra for dusting
- 1 tsp dried yeast
- 1 tsp sea salt
- pinch of caster sugar
- half of cup of warm water
- 1 tbsp olive oil
Topping (2 pizzas):
- 6 strips bacon (fried)
- 1/2 cup grated parmesan
- 2 cups grated mozzarella
- 6 eggs
- pepper and salt
- 2 tbsp minced flat-leaf parsley
- 2 tbsp minced chives
- 2 scallions, thinly sliced
We will start with making the pizza dough. Sift the flour into the bowl and add yeast, salt and sugar. Pour the water and oil in the middle and mix everything to form a soft dough, move it on a floured surface and knead for about 10 minutes until it’s smooth and elastic. Transport it to the oiled bowl, cover and leave to rise in a worm place until it doubled in size (about 1h).
Heat oven to 445F. Divide the dough in half and roll each of them out to around 10 inches. Transfer to a heated baking sheet, sprinkle the dough with half of the Parmesan, mozzarella and bacon. Crack 3 eggs over the top and season with salt and pepper.
Bake for 10 minutes, when ready - sprinkle half of the parsley, chives and scallions. It’s delicious.
To make it fasted in the morning, you can prepare the dough in the evening and refrigerate overnight. You like pizza on the end of the day? You will love it in the morning as well!
